Ingredients
2 eggs, beaten
2 scoops (60g) True WPI 90 Banana and Honey
1 tsp apple cider vinegar
2 tsp baking powder
3 tsp stevia
2 tsp coconut oil
¼ cup rice malt syrup
4 lady finger bananas, sliced in half lengthways

In a mixing bowl add the beaten eggs, protein, vinegar, baking powder, and stevia. Using a whisk, mix the ingredients until well combined. Allow to rest for 20 minutes while the vinegar and baking powder react.

Heat the coconut oil in a frypan over medium heat. Once melted, add the banana slices and rice malt syrup. Cook for 6 minutes or until the banana has caramelised.

Meanwhile, pour a ¼ cup of the waffle batter into an oiled waffle maker. Cook until golden brown.

Serve two waffles with a generous dollop of yoghurt and the caramelised banana.
