Ingredients
2 eggs
1/3 C olive oil
1 C milk
1 ½ C plain flour
½ C shredded coconut
3 tbsp True Protein WPC80 in Raw Coconut
½ C stevia
¼ tsp salt
2 tsp baking powder
2 tsp lime zest
Icing
½ C icing sugar
2 ½ tsp lime juice
Method
1. Preheat your oven to 180’C.
2. In a bowl, whisk the eggs, olive oil and milk.
3. Add the flour, coconut, WPC80, stevia, salt, baking powder and lime zest and mix well until combined.
4. Pour the batter into a lined loaf tin and bake in the oven for 30 mins or until a skewer comes out clean. Allow to cool.
5. For the icing, combine the icing sugar and lime juice in a small bowl.
6. Once the loaf has cooled, pour the icing over the loaf and top with extra lime zest and coconut.
