Pina Colada Overnight Weet-Bix

Serves 1

Prep time: 40 minutes

Macros 

Carbohydrates 72g 

Protein 32g 

Fats 32g

 

Ingredients 

3 weetbix 

1 tbsp True Protein WPI 90 in Raw Coconut

½ cup coconut milk 

½ cup vanilla high protein yoghurt 

½ cup pineapple, finely diced 

2 tbsp toasted coconut flakes 

Top with:

¼ cup pineapple, finely chopped 

1 tbsp toasted coconut flakes 

 

Method 

1. In a small container, crush the weetbix and add the Raw Coconut WPI90 and almond milk. Mix well and then flatten with the back of a spoon. 

2. In a bowl, combine the vanilla yoghurt, diced pineapple and coconut flakes. Layer this over the top of the weetbix and spread until smooth. 

3. Layer the remaining pineapple and coconut flakes over the top and place in the fridge for at least 30 minutes to set, or overnight. 

 

Note: the acidity of the pineapple can cause the yoghurt to spoil faster so I would recommend consuming within 24 hours of preparing this recipe.
