Ingredients
145g butter, melted
2/3 cup coconut sugar
1 egg
1 egg yoke
2 TP scoops True Plant Protein in French Vanilla
½ cup gluten-free plain flour
1 tsp vanilla extract
½ tsp bicarbonate of soda
100g chocolate chips or chunks
Method

Line a small baking tray with baking paper and preheat the oven to 180 degrees Celsius

Place the sugar and melted butter into a bowl and whisk until combined

Add in the vanilla, eggs, bicarbonate of soda and mix until incorporated

Fold through the protein powder and flour then add in the chocolate chips/chunks towards the end

Pour the batter into the tray and flatten with a spatula. Bake for 20-25 minutes

Allow to cool for 30 minutes before cutting
