Raw Ginger Slice

Prep time: 15 minutes

Setting time: overnight

 

Ingredients

 

Base:

3/4 cup almond meal

1/2 cup walnuts

1/2 cup desiccated coconut

2 tsp ground ginger

1 scoop (30g) True Plant Protein French Vanilla

Pinch of Himalayan pink salt

3 Tbsp melted coconut oil

3 Tbsp pure maple syrup

 

Top Layer:

1/2 cup pure maple syrup

3/4 cup coconut oil

3 Tbsp cashew butter

4-6 tsp ground ginger

2 tsp vanilla extract

 

Method

 

  1. Prepare a small loaf tin and line with baking paper, then set aside.

  2. Combine all ingredients together in a mixer and blend till combined and crumbly.

  3. Press mixture into the bottom of the tin until flat and even. Set aside in the fridge while making the top layer.

  4. Combine all ingredients until smooth - you want the cashew butter to melt and dissolve into the mixture.

  5. Pour over base layer and leave in the freezer to set overnight. Slice & enjoy!
