Almond, Ginger & Mandarin Cookies

Ingredients

 

1 cup rolled oats 

1 cup almond meal 

1/2 cup shredded coconut 

1/2 cup roasted almonds, roughly chopped 

1 tsp baking powder 

Pinch salt 

1 1/2 tsp ginger 

1 tsp cinnamon 

1 scoop (30g) True WPI90 in French Vanilla or Salted Caramel 

1/3 cup olive oil 

1 egg 

1 egg white 

Zest of 1 mandarin 


Method

 

  1. Preheat the oven to 180 degrees Celsius fan forced. 

  2. Combine all dry ingredients in a large bowl and mix until combined. 

  3. In a small bowl, whisk together the olive oil, egg + egg white and mandarin zest until smooth. 

  4. Add the dry ingredients into the wet and stir until evenly combined and sticky. 

  5. Form into about 16 cookies and bake  for about 15 minutes, or until golden.
