Ingredients:
1/2 cup grapeseed oil
3/4 cup raw sugar
2 ripe bananas, mashed
2 eggs
1 tsp vanilla extract
1/2 cup skim milk
1 1/2 cups self-raising flour
40g (5.5 tbsps) True Protein WPI 90 in French Vanilla
1 tsp baking powder
1/2 tsp salt
1 cup frozen raspberries
Method:
1. Preheat the oven to 180 degrees Celsius and line a loaf tin with baking paper.
2. Add the grapeseed oil, sugar, banana, eggs, vanilla extract and milk to a bowl and whisk until combined.
3. To the same bowl, add flour, protein powder, baking powder and salt then gently fold until just combined. Add in the raspberries and fold until evenly distributed.
4. Spoon batter into the loaf tin and place into the oven to bake for 45-55 minutes or until a toothpick when inserted comes out clean. Allow it to cool for 30 minutes on a wire rack before slicing. Enjoy!
