Ingredients:
Base:
1 cup raw almonds (180g)
1 c rolled oats (100g)
1/2 cup dried dates (100g)
Pinch salt
30g True Protein WPI90 in Salted Vanilla
50ml water
Filling:
1 heaped cup dried dates, soaked in boiling water for 5 minutes + ~6 tbsp of the date water
4 tbsp hulled tahini
1 tbsp honey
1tsp vanilla bean paste
1 tsp ginger powder
Pinch salt
+ chopped roasted almonds to decorate
Method:
1. Combine all base ingredients in a food processor and combine until sticky.
2. Press into a square brownie tin lined with cling wrap and place in the freezer.
3. To make the filling, combine the soaked dates, 6 tbsp of date water, tahini, honey, vanilla bean paste, ginger and salt in a food processor and blend until smooth and sticky. Add more of the date water if needed to blend.
4. Spread on top of the base and sprinkle over the almonds if desired.
5. Return to the freezer to set for a few hours before slicing. Store in the freezer.
