Ingredients
2 eggs
2 egg whites
1/2 cup almond milk
1/3 cup low-fat Greek yoghurt
2 Tbsp lemon juice
2 tsp lemon zest
1 cup self-raising flour
2 scoops (60g) True WPC80 French Vanilla
½ tsp baking powder
3/4 cup coconut sugar
Method

Line a loaf tin with baking paper and preheat the oven to 180 degrees Celsius.

Place the eggs, egg whites, almond milk, Greek yoghurt, lemon juice and lemon zest into a bowl and whisk until combined.

In another bowl, mix together the flour, protein powder, baking powder and coconut sugar.

Add the wet mixture to the dry and fold until just combined. Pour into the lined tin then place into the oven to bake for 45-50 minutes or until a skewer when inserted comes out clean. Allow to cool completely before serving.
