Ingredients
1/2 cup coconut yoghurt
1/2 cup fresh pineapple
Juice from 1 lime
Fresh mint leaves
Method
1. Roughly chop pineapple and add to blender.
2. Add all other ingredients to a blender and blend until a smooth liquid is formed.
3. Pour into ice-block mould and freeze overnight.
