Protein Bar Granola

Prep time: 15 minutes

Baking time: 15-20 minutes

Ingredients

1 1/2 cups scotch oats or rolled oats

1 cup walnuts

1/2 cup pumpkin seeds

1 cup shredded coconut

Pinch of salt

1 tsp cinnamon

1/2 cup maple syrup

1/2 cup coconut oil

1 tsp vanilla essence

2 True Protein Bars in Toasted Coconut flavour

 

Method

 

  1. Place the dry ingredients in a large mixing bowl and stir until evenly mixed. On a stove top (or microwave), melt the coconut oil and maple together. Once melted, stir in the vanilla. Stir the wet ingredients into dry until evenly incorporated.

  2. Chop both protein bars into 1cm squared chunks, add 1 into the mix and stir. (Save the other for after cooking).

  3. Place granola mix onto a baking tray (lined with baking paper or greased with coconut oil) and bake in the oven for 15-20 minutes (until browned) on 180 degrees Celsius. Remove from oven and allow to cool. Add the remaining chopped up protein bar and stir through.

  4. Store in an airtight container for up to two weeks
