Prep time: 1 1/2 hours
Ingredients
Base:
1 cup of desired nuts
3 Medjool dates
1/2 cup coconut
2 tbsp liquid coconut oil
Pinch of salt
1/2 tsp maca powder
1 scoop of True Plant Protein in French Vanilla
Blend in food processor, press into the tray and freeze for 30 minutes or while you prepare the caramel.
Caramel:
1/2 cup almond butter
6 Medjool dates
1/4 tsp cinnamon
1/2 tsp maca powder
1/4 tsp salt
1/4 cup coconut oil
1/2 tsp vanilla essence
Blend in food processor, add to frozen base layer. Freeze for 30minutes.
Topping:
1/2 cup melted coconut oil
1/4 cup cacao
1/4 cup maple syrup or sweetener of choice.
Method
1. Mix in a blender. It should be quite runny, you can add more coconut oil if needed.
2. Pour and smooth over caramel layer.
3. Freeze for 30 minutes, then cut into cubes and freeze until ready to eat.
