Ingredients:
1.5 cups quick oats
60g (8 level tbsp) True Protein WPI 90 in French Vanilla
1/2 cup desiccated coconut
1/3 cup dried cranberries
1 tsp baking powder
1 tsp salt
1/3 cup smooth peanut butter
1/3 cup coconut oil, melted
1/3 cup honey
1 egg
Method:

Preheat oven to 180 degrees Celsius and line 2 trays with baking.

Place the oats, protein powder, coconut, cranberries, baking powder and salt into a large bowl and combine.

In another bowl whisk together the peanut butter, coconut oil, honey and egg.

Add the honey mixture to the dry ingredients and mix until fully combined.

Spoon the dough onto the baking trays, ensuring there is room for them to expand.

Bake for 12 to 15 minutes, allow to cool and enjoy!
