Passionfruit and Coconut Slice

Makes 12 slices

Ingredients

Base:

150g quick oats

40g True WPI 90 in French Vanilla

3/4 cup desiccated coconut

150g white chocolate, melted

3 tbsp coconut oil

Passionfruit Topping:

2/3 cup fresh passionfruit pulp (can use frozen)

1 tbsp raw sugar

 

Method

  1. Add the oats, protein powder, desiccated coconut, white chocolate and coconut oil to a bowl and mix until combined.

  2. Spread the mixture onto a small lined baking tray and place into the fridge.

  3. To make the topping, add the passionfruit and sugar into a small saucepan and stir on low heat until reduced by a third. 

  4. Spoon the passionfruit mixture onto the slice and place into the fridge to set for 4 hours. Cut into 12 slices and enjoy!
