Ingredients
1 ½ cup rolled oats
1 tbsp chia seeds
45g (6 tbsps) True Protein WPI 90 in Salted Caramel
1 cup almond butter
2 tbsp coconut oil
¼ cup rice malt syrup
3 tbsp almond milk
Method
1. In a large bowl, combine the rolled oats, almond butter, melted coconut oil, rice malt syrup, whey protein, and chia seeds. Stir until all ingredients are well combined.
2. Line a rectangular baking tin with baking paper. Pour the mixture into the tin and press it down firmly and evenly with the back of a spoon.
3. Place the tin in the fridge for at least 1 hour, or until the slice is firm and set.
4. Once set, remove from the fridge and cut into even pieces. Serve chilled or store in an airtight container in the refrigerator for up to one week.
Tip: these also bake perfectly in the oven so if you feel like a cookie, simply roll a tablespoon of the mixture into a ball, flatten with your hands and bake for roughly 7-8 minutes or until lightly golden.
