Ingredients
2 cup grated sweet potato
1 cup grated zucchini
2 scoops (60g) True WPI90 Natural
1 1/2 cups wholemeal spelt flour
2 tsp garlic powder
2 tsp onion powder
Salt and pepper
3 eggs
Method

Grate the grated sweet potato and zucchini and use your hands to squeeze out any excess water.

In a large bowl, add all the ingredients and stir well to combine.

Place a large pan on medium heat. Add a drizzle of olive oil and add a spoonful of the mixture into the pan. Cook for 1-2 minutes, flip and then cook on the other side for another minute.

Continue with the rest of the mixture. If your fritters are not completely cooked in the middle, you can place them in the oven for 5-10 minutes.

I recommend serving these with a tomato chutney and some fresh rocket, it makes for the easiest on-the-go brekky!
