Ingredients:
1 cup rice cereal
1 cup quick oats
50g (6.5 tbsps) True Protein WPI 90 in French Vanilla
2 tbsp flaxseed meal
1/2 tsp ground cinnamon
1/2 tsp salt
1/2 cup honey
1/2 cup crunchy peanut butter
1 cup Medjool dates, pitted and diced
Method
1. Line a small baking tray with baking paper.
2. Place the rice cereal, oats, protein powder, flaxseed meal, cinnamon and salt into a bowl and mix. Set aside.
3. Add the honey and peanut butter to a small saucepan and heat on low until everything is melted.
4. Add the honey mixture and dates to a food processor and mix on high-speed until a smooth paste forms.
5. Add the date paste to the dry ingredients and mix until everything is combined. You may need to use your hands as it is quite dense.
6. Spread onto the lined baking tray and place into the fridge to set for 2 hours before slicing into 16 bars, enjoy!
