Ingredients
150g wholemeal flour
1 tsp baking powder
pinch of pink salt
2 scoops (60g) True WPI 90 Natural
2 eggs
½ cup almond milk (125ml)
100g sun-dried tomatoes
70g Greek feta
1 Tbsp chives (chopped)
60g fresh spinach
Method

Pre-heat oven to 170 degrees Celsius and line a muffin tray.

Place all the dry ingredients into a large bowl.

In a separate bowl whisk the two eggs together and stir in the almond milk.

Dice the feta into cubes and chop the chives and spinach.

Add all ingredients into the large bowl and stir until just combined.

Evenly divide mixture into the muffin tray and bake in the oven for 15 mins.
